Delicious Apple Cake with Cinnamon!
Hej everyone,
Today, I'd like to share a simple recipe with you guys, I don't remember when I first had the cake but I remember loving it. I usually make them in Denmark, and this was the first time I made them in Malaysia. It had a different kind of vibe to it, and tastes different too (Maybe because I don't have a proper mixer to properly mix the batter ) but it turned out good! So here it is!
8 Apples
250g Soft Butter
250g Sugar
250g Flour
4nos Small- Medium Eggs
1tsp Baking Soda
5tbsp Sugar
4tsp Vanilla Essence
5tsp Cinnamon Powder
1 handful chopped Hazelnut/Almonds
You can leave out the nuts cause I did :P
Alright, first of all, peel the apples and slice them into wedges, cut most of the apple wedges into 2-4 slices depending on the size, and also cut some of the apples into smaller sizes to mix directly into the batter.
Mix the softened butter and sugar together with a whisk in a large bowl, and add in one egg at a time. Although the recipe said 4 eggs, I used 3 eggs cause they were kinda huge, which is fine and then mix in the vanilla essence
Next, mix flour, and baking power in another bowl. Slowly, corporate both the butter mixture with the dry ingredients.
Take about half of the apple slices and line them in a greased round time of approx 24cm in diameter. Mix sugar and cinnamon powder together and sprinkle half of the cinnamon sugar over the apples at the bottom.
Mix the smaller pieces into the cake batter and pour the batter into the tin and spread the batter evenly.
Line the rest of the apple wedges on top of the batter and sprinkle with the rest of the cinnamon sugar.
In case you're using hazelnuts or almonds, chop them into small pieces and sprinkle them op top of everything.
The tin is placed in a preheated oven at 180 degrees Celsius and is baked for 1 hour. Be careful so the nuts don't burn. To check the doneness, stick a skewer into the cake and if it's pulled out clean, the cake it done and if it's not, give it a few more minutes :)
Serve the cake warm with a little whipped cream and enjoy :)
Here's a pic from when I did it in Denmark
